If you already have a skill for your job, you could possibly get a part time job that pays more than the typical fast food restaurant or department store part time job. If you don't have a special skill, can't find a job for it, or have enough of that at work, you can always get an ordinary part time job at a supermarket, mall, restaurant, country club, etc. There are lots of places to look for and find flexible work.
Another great idea is to start your own side business. A business doesn't have to be fancy and complicated like a restaurant or shop, it can be simple. For example, babysitting kids can be a small business. You simply build a client base and do a good job to get paid the most possible. The same goes for landscaping, house cleaning, etc.
Related to the above, why not try selling your own wares? Almost everyone can find something that they are good at, and if so you should be able to find someone willing to pay you. Maybe baking, or preserves are your thing? You don't even have to produce a physical thing though - maybe you play an instrument. If so, try advertising your services as a tutor. You might even be able to help high school students with their homework if you are particularly good at math, English, etc.
One of the perennial favorites for some quick cash is the garage or shed sale. Empty out all that junk from the back of the kitchen drawers, the attic, and those shoes under the bed.
